Anna’s Thai style mussels

Ingredients
1 kg mussels
2 stalks of lemon grass, finely chopped
4 shallots or 1 onion, finely chopped
4 kaffir lime leaves, roughly chopped
2 red chillies
1 tablespoon fish sauce
2 tablespoon lime juice
Chopped coriander and spring onions to garnish
Method
- Place all the ingredients into a large pot
- Cover and cook for 5 to 7 minutes on medium to high heat, or until the mussels open
- Turn off heat and garnish with some chopped coriander and spring onions
- Enjoy on its own or with some freshly cooked Jasmine rice
