Anna’s Thai style mussels

1 kg mussels

2 stalks of lemon grass, finely chopped

4 shallots or 1 onion, finely chopped

4 kaffir lime leaves, roughly chopped

2 red chillies

1 tablespoon fish sauce

2 tablespoon lime juice

Chopped coriander and spring onions to garnish



  1. Place all the ingredients into a large pot
  2. Cover and cook for 5 to 7 minutes on medium to high heat, or until the mussels open
  3. Turn off heat and garnish with some chopped coriander and spring onions
  4. Enjoy on its own or with some freshly cooked Jasmine rice
