Alexi’s Spanakopita

1 Onion

2-3 Eggs

Feta cheese

Parmesan (or other hard cheese)

Frozen spinach (defrosted)

Puff pastry

Salt, pepper & nutmeg to taste



  1. Defrost a couple of sheets of puff pastry
  2. Line quiche or small shallow baking dish with pastry
  3. Make a few holes in the pastry with a fork and then blind bake pastry for about 10 minutes
  4. Saute chopped onion in some oil
  5. Add to bowl with spinach, eggs, feta cheese, parmesan, salt, pepper & nutmeg. Mix together
  6. Take pastry case from oven and allow to cool
  7. Place spinach mixture in case then put strips of pastry in criss-cross pattern (can put a bit of egg wash on top if want)
  8. Bake in oven for approx. 30 mins
  9. Enjoy!
