Alexi’s Spanakopita

Ingredients
1 Onion
2-3 Eggs
Feta cheese
Parmesan (or other hard cheese)
Frozen spinach (defrosted)
Puff pastry
Salt, pepper & nutmeg to taste
Method
- Defrost a couple of sheets of puff pastry
- Line quiche or small shallow baking dish with pastry
- Make a few holes in the pastry with a fork and then blind bake pastry for about 10 minutes
- Saute chopped onion in some oil
- Add to bowl with spinach, eggs, feta cheese, parmesan, salt, pepper & nutmeg. Mix together
- Take pastry case from oven and allow to cool
- Place spinach mixture in case then put strips of pastry in criss-cross pattern (can put a bit of egg wash on top if want)
- Bake in oven for approx. 30 mins
